The Department of Food Science and Technology is proud to highlight Ikenna Okehie, a graduate student in Food Science and Technology, for his recent participation in IFT FIRST 2025 in Chicago. This marked Ikenna’s first time attending the event, and he embraced every opportunity to learn, connect, and grow as a food science professional.

Reflecting on the experience, Ikenna shared:

“This was my first time attending the College Bowl, and I was amazed by the energy, enthusiasm, and depth of knowledge on display. Throughout the week, I explored numerous product development competitions and was particularly struck by how scientific principles and creative innovation came together in deceptively simple yet impactful food product designs. I also attended both the graduate and undergraduate research video competitions, where I witnessed timely and cutting-edge research being communicated in engaging ways.

The poster sessions were a highlight, showcasing a diverse range of innovations across food science disciplines. On the expo floor, I had the chance to network with industry professionals and explore new technologies. One standout was an encapsulated CO₂ solution for sparkling drinks, which demonstrated the exciting advancements being made in beverage innovation. I also participated in the IFTSA Sustainability Safari, where I engaged with booths focused on sustainable solutions, reinforcing the importance of environmental stewardship in our field.

A particularly memorable moment was the keynote talk on artificial intelligence, which offered timely insights into how emerging technologies will shape the future of food. To cap it all off, I was officially recognized as a member of the IFTSA Board of Directors for the 2025–2026 term, an honor I am truly grateful for.”
